French Dip Sandwiches on a Pretzel Bun

On Sunday I decided to treat the guys (Brandon and his two friends) to a yummy lunch while they sprawled out on the couch watching endless hours of football. I’ll be honest, the chuck roast for the French dip was SUPER easy to make in my instant Pot. . .the pretzel buns were not as easy. It was my first time to ever make pretzel buns so that’s to be expected. The only other time I’ve made bread was a no-knead bread last December which was insanely easy. If making pretzel bread isn’t your jam, Trader Joe’s sells them, or you can check your local grocery store. I love the extra bit of saltiness that the pretzel bread brings.

A few tips:
Get a chuck roast that has some really good marbling
2.5lbs should be more than enough
I used about 2 cups of red wine because why not?
No need to pick up a fancy bottle of wine, I used Trader Joe’s Two Buck Chuck
Make sure to read the pretzel bun recipe a few times through before you actually start the process. I’m constantly guilty of jumping in.

Cookbook – Cravings Lemony Arugula Cacio e Pepe

Hey y’all I know it’s been a while since my last post but we have been busy traveling, spending time with friends, and dealing with the new normal after Hurricane Harvey. Brandon and I were very fortunate as there was no damage to our home but we know others were not at lucky.

If you were ever in my kitchen you would see a stack of beautiful cookbooks with lots of recipes flagged and if you ever looked at my Pinterest board you would see there is even more food there. I’ve decided to cook my way through all of it over time and to train myself to create my own recipes to share with all of you. I guess it’s my own version of Julia & Julia.

We were in Panama City Beach, FL with my family last weekend and I knew I wanted to make a dinner for my parents. We stayed at the Marriott Vacation Club so I had a full kitchen to use and a new grocery store to explore. I wish we had a Publix in Houston. After scanning my Pinterest board I realized I wanted to make Chrissy Teigen’s Lemony Arugula Spaghetti Cacio e Pepe from her cookbook Cravings. You can find the recipe here.

It was super easy to make especially with a limited amount of kitchen utensils and quick! I added some Floridian shrimp to the dish for some extra protein and little baby balls of fresh mozzarella because they are my favorite. My family LOVED the bright flavor of each bite, how cheesy it was without feeling super unhealthy, and how balanced the dish was. They even requested I make it again when I see them for Christmas.

A few tips:
Add some fresh mozzarella
Buy the pancetta, I promise it brings a different level to the dish
If shrimp isn’t your thing, chicken would be great to add
Don’t be scared, add more Parmesan reggiano
