Happy November 1st! I can’t believe there are only 2 more months in 2016! Where did the year go!?!?
With the holidays around the corner I’m trying to minimize my spending to the bare bones this month with a spending freeze. I think a lot of the time I mix up or try to justify my wants vs. my needs. Here are a few of my guidelines
No eating out
No unnecessary spending
No Starbucks
No adding extra items to my grocery cart because I want to try it
No manis or pedis (this one hurts the hardest but I have more than enough nail polish at home that I can paint my own toe nails)
Since I can’t eat out for lunch or dinner I knew I had to plan my meals ahead but I also didn’t want to spend an hour each night cooking after work. I did some Pinterest research and found a TON of make ahead freezer meals. Over the weekend I went to Sam’s Club to pick up a few things, like produce, Rotel and meat then I went to HEB to get the rest. Once I got home I was able to knock out 3 recipes that make 2 meals. So in an hour I was able to make 6 meals! It was super easy and the clean up was minimal. I wanted to make a few more on Saturday but an afternoon Texas Tech game didn’t allow it and after my race on Sunday I did not want to move. I’ll make a few more tonight; I’m most excited about the make ahead breakfast burritos because this girl loves a breakfast taco.

Easy Pesto Chicken
Crockpot Beef Burritos
Creamy Italian Chicken
Once I make them I’ll let you know how they turn out.
